Made from boneless pork legs, salted and then cooked. The meat is light pink with thin beading of fat which contributes to the fullness of its delicate but typical flavour. Thinly sliced, used in sandwiches or pizza topping; also cubed into salads, sauces or chopped and used as flavouring for fillings.
